Cheese can be the hardest tho g to give up when you go vegan (or plant-based). The ones you can get in the store can sometimes be a bit expensive, or you might not be able to get anywhere you are. So let’s make an easy cheese to start with. Let’s make some simple Salsa Con Queso.

I have always been a HUGE nacho platter addict. Ever since my college days. So it was kinda unfortunate for my favourite food group when I chose to go vegan. Nachos we’re always best dripping in cheese. So when I started testing out cheese sauce recipes last Christmas. I came up with this bad boy.

When I was first testing out cheese sauce recipes, I wasn’t always fond of them. The one’s like this one with potatoes and carrots never seemed creamy enough for me, and cashew-based options were WAY out of my options. So, I kept working and came up with this recipe. It’s delicious and zingy. Something I love.
Vegan Salsa Con Queso (No Nuts or Soy)

It’s always nice to have a versatile cheese available and ready for anything you may need it for. This is one GREAT option.
Ingredients
- 1 lrg Potato
- 1 Cup Carrots
- 1 Cup Caulifower
- 1/4 Cup Olive Oil
- 1 TBSP Lemon Juice
- 1 TSP Garlic Powder
- 1/4 TSP Onion Powder
- 6 TBSP Nutritional Yeast
- 1 TSP Salt
- 1/4 Cup Salsa
Instructions
- Chop and peel Carrots and potatoes into small chunks
- Cook until nearly mush
- Drain and add to food processor with oil, lemon and seasonings
- run till sauce is smooth
Like I’ve said so many times. I am an absolute nacho ADDICT so this is great as a cheese substitute. I just glob it on (like in the nacho dinner in this video)
A few notes on this recipe:
- For once you really wanna boil the life out of your veggies. This helps create a smooth texture in your cheese sauce.
- Adding in your salsa last allows you to keep some chunkiness with the end result. If you want a completely smooth sauce, than add it with everything else.
