We all know desserts aren’t the cheapest way to spend our money, but not having desserts for special occasions and get together seems like too much of a letdown. This pineapple bread can easily be made not only on the cheap. But nearly 100% of the ingredients for this vegan Pineapple Bread can be found at most food pantries, bulk stores and dollar stores. Making this recipe super manageable.

This Bread is a density and style very similar to a pound cake. It’s moist and filled with chunky pineapple pieces in every bite. I don’t think you can go wrong with that unless you’re allergic to pineapple or don’t like it (who doesn’t like pineapple?!)
I feel like pineapple bread is a mix between a dumbed down (ingredients-wise) Hummingbird bread from Jamaica and the pound cake that we all know and love. It’s moist and quite hefty. Great paired with syrup or a bowl of mixed fruit. It feels like a treat without costing much at all.
A few notes on this recipe:
- I have used crushed pineapple, and it works as well. The results don’t bake with visible pineapple pieces, but it’s an option.
- If you want you can add texture by putting a 1/2 cup of your favourite chopped nuts in. It works as well.
