I love nachos. I have for years now. There is nothing better in my opinion. But one thing that I have been missing until recently and too lazy to do was to create the perfect vegan ground meat replacement to top them with.

When I really sat down and thought about what meat alternative would work with my nachos. I realized it had to be easy to find, budget-friendly and something I could easily store. Basically a pantry item. Thats how I came up with this delicious and simple TVP Ground “Beef”. I use it in so many things because it is SO EASY.

While tofu is my go-to a lot, as you well know. This vegan ground meat is definitely something I wanted to be cheap, easy, and storable. So TVP was my first choice. Ground beef and TVP have very similar textures. So it makes it easy to swap one out for the other. But as always, with this recipe. The key is in the seasonings.
This is SOOOO versatile. This ground can be added to chilli, tacos, nachos, I’ve even tried mixing it with my salsa con queso cheese sauce to make a kind of Philly cheesesteak. But, in all honesty, it is a very versatile recipe, and you can use it in so many dishes.
A few notes on this recipe:
If you want a crisper ground something that tastes a little dryer. Once the liquid in the pan has evaporated, season and transfer to a baking sheet. Place in the oven at 250F for 10 mins. Check it for your preferred texture and if you want it a bit dryer mix it up and put it in for another 5 mins at a time.
Vegan Ground Meat Alternative Using TVP
Ingredients
- 1 Cup TVP
- 1.5 Cups Water
- 1.5 TBSP vegan butter
- 2 TBSP Chili Powder
- Salt to taste (optional)
Instructions
- Boil water (once boiling turn off the stove)
- Add TVP and let it rehydrate
- Take whatever water is left with the TVP and add to sauce pan with butter.
- Cook on med. till water is all gone
- Add chili powder and salt if wanted
- Cook until slightly dried out.
