When I first started to THINK about making my own bread ANYTHING. I was absolutely floored at how easy and inexpensive it is. I love to use my bread machine as a set-and-forget method. It works for dough as well. I always wondered, why you wouldn’t just buy it and make it super easy. One less thing to deal with right? Make someone else do the work, you reap the benefits. The goal of a good crust is simple. It needs to be delicious. No, no, no…thats not all. Now, the crust needs to cook well, be nice and airy and have a nice “bounce” to it. This happens when you kneed the dough.Basically, what you are doing is creating layers and pockets that make it so light and airy.
