It’s hard to find delicious meals on super short budgets. That’s why our seasonings have to be on point. With just a few ingredients and delicious spices. That is always the goal of every recipe I do. How can I make this super delicious still, but as cheap as possible!?

Greek Potatoes – Easy Vegan Pantry Only Dishes
Ingredients
- 1 can of whole potatoes cut in half .97$
- 1 C broth (using mushroom broth) $2.27 – $0.19
- 2 TBSP olive oil $8.97 – $0.13
- 1 TSP lemon juice $1.97 – $0.01
- 1\2 TSP of rosemary $1.97 – $0.16
- 1\2 TSP garlic powder $1.97 – $0.16
- 1\2 TSP oregano $1.97 – $0.16
- Pinch pepper $1.97 – $0.10
- 1\2 TSP of salt $0.67 – $0.01
Instructions
- Drain potatoes and rinse then dry them
- Cut in half
- Add seasoning and olive oil
- Toss to coat
- Add potatoes to an oven-safe dish
- Pour 1\2 the broth/stock in and around the potatoes not on, or you’ll wash off the seasoning
- Bake at 425 for 15mins
- Flip potatoes and add remaining stock and the lemon juice
- Bake for another 15 min
- Once done toss and spoon stock over the potatoes and place under the broiler for 10 mins or until browned
A few notes on this recipe:
- Recipe is easily doubled, tripled etc.
- Shop new spices you have not tried before at bulk store whenever possible. That way you don’t waste your money if you don’t like them
