The nostalgia of ooey-gooey chocolate chip cookies will never be lost on anyone. The memories made around those cookies always seem to be epic and happy. That’s why we eat them when we’re sad. By we, I mean I. If you don’t thats fine. You’re a weirdo, I’m a weirdo too. Now, what if we took those little cookies made thicker and made them into bars? Sounds good, doesn’t it!? So let’s make some vegan Chocolate Chip Cookie Bars.

This is a constant go-to dessert recipe for me. I make it when I’m happy, I make it when I’m sad. You can dress it up with ice cream (vanilla has always been my favourite with this chocolate chip cookie bar) and whipped cream. Add some fruit in for a healthy look and some pretty colours and you have yourself a celebration.

I started making this chocolate chip cookie bar quite a while ago, and it was always a hit. It’s just super satisfying and just the right amount of decadence. These cookie bars have nice crispy edges and moist and gooey middles. If thats not the perfect kind of dessert bar, well then I don’t know what is!
Vegan Chocolate Chip Cookie Bars (Vegan)
Ingredients
- 2 C AP Flour
- 1 TSP Baking Soda
- 1/2 TSP Salt
- 2 Flax Eggs
- 1 C Butter/Margarine
- 1 1/2 C Brown Sugar
- 2 TSP Vanilla Extract
- 1 C Chocolate Chips
Instructions
- Prepare flax egg
- Preheat oven to 350 and butter your pan
- Melt butter
- Wisk together melted butter, sugar, vanilla extract
- Add flour, baking soda and salt
- Mix until well combined
- Fold in chips
- Transfer to buttered pan and smooth out
- Bake 25 mins (till a tooth pick comes out clean)
- Remove from oven and let cool for 10 mins before removing from pan.
A few notes on this recipe:
- If you want a more “designed” bar add some extra chips to the top of the dough before putting it in the oven.
