Pasta is and always will be a staple. But stuffed kinds of pasta like butternut squash ravioli…they feel so much more special than regular pasta, ya know. Like special occasion type pasta. But it doesn’t have to be a special occasion type pasta. Cause it doesn’t have to take up much time. Just be prepared, and you got Easy Butternut Squash Ravioli.

Now, pasta has always been very basic for me. I didn’t get good quality pasta until I was well into adulthood and making my own. In fact, you can see about the time I started making my own pasta just a few years ago right here (link). But that hasn’t stopped me from wanting to catch up on lost time by making it all. Including “budgetizing” some fancier kinds of stuffed pasta like ravioli.

The beauty of budget meals on my site is that while things aren’t typically bought fresh. They are bought frozen (which is technically more fresh than fresh produce) and or dried, which can store for long periods of time. Meaning you can catch sales and stock up on the ingredients so that you can have this delicious and easy butternut squash ravioli whenever you want.
Butternut Squash Ravioli- Vegan Pasta for Pennies
Ingredients
- 3C Frozen Butternut Squash
- ½C onion diced
- ½TSP Garlic Powder
- ½TSP Ground Sage
- ½TSP Salt
- ¼TSP Black Pepper
- 1TBSP Olive Oil
- 1TBSP Syrup
- 2TBSP Nutritional Yeast
Instructions
- Chop onion into chunks
- Heat oil
- Add spices (minus Nutritional Yeast)
- Throw in the onion and saute till translucent
- Add the squash and thaw
- Once Squash is heated through add syrup and Nutritional Yeast
- Cook and smash mixture till it’s likened to a thick paste consistency
- Take your pasta dough and roll it to a 3 if you have a pasta machine (if not roll it as thin as you like)
- Fill about 1 tablespoon of filling every 1/2″ apart
- Flip the top of the pasta dough down
- Pinch all the edges nice and tight and cut apart
- Boil a pot of generously salted water
- Add ravioli to the pot and wait for them to float
- Once floating scoop out and plate for your favourite sauce
A few notes on this recipe:
- This recipe would go the best with a browned butter sauce, but it also works with a nice acidic basic tomato sauce. Just make a very simple sauce, because you don’t want it competing with the deliciousness that is the ravioli.
- You can make these and freeze them for a later date. Just let them dry out a bit first.
