Apple Pie Stuffed French Toast (Simple & Vegan)
Notes
This recipe makes just enough stuffed French Toast for 4 people, but you can easily double and or triple the recipe.
Ingredients
- 2 TBSP Sugar +1TBSP for apples
- 1/4 TSP Salt + 1/4 TSP for apples
- 1 TSP Cinnamon + 1 TSP for apples
- 1 C Milk
- 2 TSP Vanilla Extract
- 2 Thinly sliced apples
- 8 Slices of your choice of bread
Instructions
- Peel and slice apples thinly and mix with cinnamon, salt and sugar. Let sit while you prepare the French toast mixture
- Add sugar, salt, vanilla extract, milk and cinnamon together till everything is dissolved.
- Add some butter into the pan and turn onto med. heat.
- Place a layer of apple slices between 2 slices of bread and dip both sides in the French Toast mixture
- Place in your pan spaced apart and cook evenly on both sides till golden brown.
- Remove from the pan and serve. Topping with your favourite ingredients.

This is such a great and quick recipe that you can honestly make at any time. The “batter” and the apples sit well for about a week, so if you want to make it ahead of time and store them in the fridge. That works very well.
A few notes on this recipe:
- you can remove the cinnamon from the batter if you don’t like it as much, but I highly recommend leaving it in the apples, as it creates the apple pie flavour so much more
- It honestly doesn’t matter what kind of milk you use. As long as you have a thicker consistency in your wet mix, you will be fine.
