Spaghetti is one of those dishes we had quite often in my families home. It’s a dish most picky eaters enjoy. So the fact that it is quick and simple is just a bonus! I can remember having this at least once a week while growing up. Although, it wasn’t my favorite back then. I find myself craving that comforting feeling you get from the dishes I grew up with and cherish. The recipes that bring back memories of home and family are always the best. As an Italian and food lover of the HIGHEST accord, I have no problem admitting that pretty much ALL of my memories both good and bad, can be associated with a dish of some sort. Spaghetti was just one of those recipes that were always familiar and consistent.

Budget-Friendly Spaghetti Sauce

As I have grown older, I like to make it a little less primary. You won’t see me pouring a can of sauce on cooked noodles anytime soon. No way! I love flavor and texture. Which is why this budget-friendly spaghetti sauce is full of chunky goodness is so amazing.  The great thing about this recipe is how easy it is to prep and cook. It’s one of those meals that you can prepare in large batches, freeze and use at a later date. Now, who doesn’t like that? In This meal will only cost you a few measly dollars, and the majority of the ingredients can be found cheaply at a grocery store, but also at dollar stores as well.

Budget-Friendly Spaghetti Sauce | Vegan Staple Sauce

Budget-Friendly Spaghetti Sauce | Vegan Staple Sauce


  • 1 tbsp extra-virgin olive oil
  • 2 small yellow onions/1 cup
  • 2 large garlic cloves minced/ 1 tbsp jarred
  • 1 can diced tomatoes & half it's liquid (796mL/28 oz)
  • 1 tbsp dried thyme
  • 1 tbsp dried oregano
  • Black pepper and salt (optional) to taste


  1. Add the oil, onion, and garlic into a medium saucepan and stir to combine. Season with salt and pepper. Saute over medium heat for about 5 minutes until the onion is translucent.
  2. Stir in the diced tomatoes and increase the heat to med-high until a low boil occurs. When the mixture boils, reduce the heat to medium and simmer for about 15 minutes, uncovered, until most of the liquid cooks off. Watch closely, reducing heat if necessary and stirring often.
  3. Stir in the dried thyme and oregano, salt and pepper, and nutritional yeast (optional but tasty). Continue cooking until thickened to your liking and then remove from heat.

Who says you can’t have delicious food on a vegan diet while broke? I have proven over and over again, that, that is not true. I strongly encourage you to try this recipe. No matter what kind of a day you have had, or how tired you are. This staple is sure to satisfy your pasta cravings.
